Instructions
1. Preheat oven to 175°C and lightly spray or butter the muffin tray.
2. Add 1 cup of oats to a blender and blend until they form a fine flour.
3. Add the remaining ingredients to the blender and blend until smooth and well combined.
4. Pour the batter evenly into the muffin tray, filling each mold about ¾ full.
5. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
6. Let the muffins cool in the tray for a few minutes, then transfer to a wire rack to cool completely. Enjoy!
